Sweet Potatoes: Why Cut Size Matters
Sweet potatoes hold more moisture than a russet, and that’s exactly why cut size matters. The air fryer crisps from the outside in by pulling moisture out of the surface, so a thicker piece has more of that moisture to move through before the outside can catch up to the center.
Cut too thick, and the exterior overcooks while the middle is still catching up. Cut too thin, and there isn’t enough moisture left to keep the center tender by the time it’s done. This is the reason that consistently even slices are so important.
Before you start cutting, check each potato for soft spots or bruises and cut those away completely. If your sweet potato has a lot of these, they are better suited for mashing or shredding for sweet potato fritters.
Start your fries with the cleanest potatoes you have and keep every strip between 1/4 and 1/2 inch. Cut with the same care across the whole batch, so the tray finishes together instead of some pieces drying out while others lag behind. If you struggle with making even slices, try using a mandoline set to the 1/4″ size.

Tips for Success
These fries come together fast, but a few details separate crisp from soggy.
- Cut evenly. Uneven strips cook unevenly. Thin pieces burn while thick ones stay soft in the middle.
- Don’t crowd the basket. Cook in batches if you need to. A single layer with space around each piece is what actually gets you the crisp exterior.
- Shake halfway through. This browns all sides instead of just the ones touching the basket.
- Skip the soak. Unlike a classic potato fry, these don’t need a pre-soak to crisp up. Even cuts and enough space in the basket do that work instead.

Serving Suggestions
Serve these hot, straight out of the basket. While ketchup is a classic dipping choice, you can’t go wrong with my sweet & spicy sriracha sauce (which was invented specifically for my sweet potato fritters!) You can also opt for a spicy honey mustard or cool and creamy garlic herb dip.
How to Store and Reheat
These are best enjoyed fresh, straight from the air fryer, but leftovers keep in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 2 to 3 minutes to bring back the crisp — the microwave will leave them soft. These don’t hold up well in the freezer, since the texture suffers once thawed.

Ingredients
- 4 medium sweet potatoes
- 2-3 tablespoons olive oil
- 1/2 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper (to taste)
Instructions
- Peel the sweet potatoes, or leave the skins on if you prefer, and cut into 1/4- to 1/2-inch strips.
- Toss the strips with the olive oil, dill, garlic powder, paprika, salt, and pepper until evenly coated.
- Preheat the air fryer to 400°F for 3 to 5 minutes.
- Arrange the strips in a single layer in the basket, working in batches so they aren't overcrowded.
- Air fry for 12 to 15 minutes per batch, shaking or flipping the basket halfway through, until crispy and golden brown.
- Repeat with the remaining batches.
- Serve hot with your favorite dipping sauce.
