1. Preheat oven to 250 degrees and prepare an 11″ x 17″ baking sheet with parchment paper, butter, or baking spray. In a medium bowl, combine flour, spices, and salt, whisking to ensure a smooth mixture without clumps.

2. In your mixer, cream butter on low with the paddle attachment. Add white and brown sugar, cream together. Scrape down the sides, then add the flour mixture until the dough becomes crumbly.

3. Scrape sides, add cream, and mix until you get a heavy, easy-to-work-with dough. Roll the dough into a square or rectangle on a floured surface, dusting with extra flour as needed. Use a rolling pin to reach about 1/4" thickness.

4. Cut shapes with a chef’s knife, cookie cutter, or glass. Arrange on a prepared cookie sheet and use a fork to poke venting holes in each cookie.

5. Bake on the middle oven rack for 14–16 minutes until the bottoms and sides turn golden brown. Cool on the baking pan for 2 minutes, then transfer to a cooling rack to cool completely.
