Potatoes – yukon gold potatoes, chopped – milk – butter – salt – black pepper Pork and Gravy – Smithfield Roasted Garlic & Herb Loin Filet – olive oil – white wine, *see notes for substitution – butter – all purpose flour – chicken or pork stock – marinade from the loin filet

Quick and Easy Garlic Herb Pork and Potatoes

1. Dice potatoes into 1-inch cubes and boil until fork-tender. Slice pork loin into 1-inch medallions, typically yielding 10 pieces from a 1.5 lb filet.

2. Sear pork medallions for 2–3 minutes on each side until the internal temperature reaches 145ºF. Remove and let them rest. In the same pan, add wine, scraping up flavorful bits until the liquid turns rich brown.

3. Reduce wine by half, add butter, then whisk in flour until a paste forms. Cook for 1 minute, add stock, and whisk until thickened. Adjust salt to taste.

4. Keep pork in gravy-covered pan over low heat. Check potato doneness by piercing with a fork; drain and return to pan.

5. Mix in milk, butter, salt, and pepper with potatoes until desired consistency. Serve topped with pork medallions and gravy.
