Preheat oven to 350º.Prepare the peach filling.
Blanch, peel and dice the peaches. (If using frozen peaches: defrost slightly and chop. If using canned peaches: drain, rinse, then chop.)
Combine the diced peaches with the sugar, cornstarch slurry, and salt. Bring to a boil then simmer for 10 minutes. Remove from heat, stir in vanilla, and set aside.
