– old fashioned oats – dry roasted hazelnuts - chopped – egg white – maple syrup – brown sugar – butter - melted and cooled – vanilla bean paste – kosher salt

1. Preheat the oven to 300º. Prepare a standard baking sheet by lining it with parchment, a silpat sheet, or a thin layer of butter.

2. In a large mixing bowl combine together the old fashioned oats and chopped hazelnuts.

3. In a smaller mixing bowl beat the egg white until foamy. Add the maple syrup, brown sugar, melted and cooled butter*, vanilla bean paste, and salt. Whisk to combine.

4. Pour the wet ingredients over the oat and nut mixture and stir to combine.

5. Spread the granola in an even layer on the baking sheet, pressing firmly to pack down. Bake in the middle of the preheated oven 30 - 35 minutes or until it's golden brown.

6. Granola won't be crispy when you remove it from the oven. Allow to cool completely in the pan to crisp up.
