INGREDIENTS

For the Veggies: – granny smith apple – sweet potato, 2 cups chopped – sweet onion – olive oil – dried thyme – salt – pepper For the Pork: – olive oil – Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin

One Pan Garlic Pepper Pork Dinner

20 MINUTES

1. Preheat the oven to 400 degrees.

2. Chop the onion, sweet potato, and apple, then toss with the olive oil, dried thyme, salt & pepper.

3. Preheat a large, 13" - 14", oven safe skillet over medium high heat, then add in just enough oil to coat the bottom of the pan.

4. Seared the pork tenderloin on all 4 sides, about 1 - 2 minutes per side.

5. Add the seasoned veggies on either side of the pork and place it all in the oven.

6. Roast for 15 - 20 minutes or until the veggies have softened and the internal temperature of the pork reaches 140 degrees. Allow it to rest 5 minutes and come up to 145 degrees prior to serving.
