Honey Garlic Carrots

1. Preheat the oven to 425ºF.

PREHEAT THE OVEN

2. Peel the carrots, top and tail them then cut them on the bias into large batons.

PREP THE CARROTS

3. Add the butter to an ovenproof dish and melt.

MELT THE BUTTER

4. Add the honey and the minced garlic and heat for 2 minutes stirring.

HEAT

5. Tip the carrots into the dish (see notes) and mix well to coat the carrots in the sauce. Add salt and pepper.

ROAST

7. Drizzle over a little more honey and scatter over the chopped parsley. Add extra salt and pepper if desired.
