– olive oil – onion – garlic cloves – fresh grated ginger – chicken stock – chopped carrots – salt – turmeric – coconut milk – Worcestershire Sauce

Carrot Ginger Soup Recipe

1. Slice the onion, chop the garlic, grate the ginger, peel and chop the carrots.

2. Warm a 2 quart sauce pan over medium heat.

3. Add your olive oil and allow to warm.

4. Add the onions and cook 3-5 minutes until soft and translucent.

Instructions

5. Add the garlic and ginger, cook 1 minute more or until fragrant.

6. Pour in the chicken stock and bring to a boil.

7. Stir in the carrots, turmeric, and salt.

8. Cover and reduce heat to medium low.

Instructions

9. Simmer for 12 - 15 minutes or until carrots can be easily pierced with a fork.

10. Remove from heat and puree mixture using an immersion blender. If using a blender or food processor, allow the mixture to cool a couple of minutes before processing.

11. Stir in coconut milk and Worcestershire sauce.
