Brown Butter Garlic Mashed Potatoes

– Yukon Gold potatoes – leaves fresh sage - chopped – cloves garlic – butter – 2% or whole milk – salt

Brown Butter Garlic Mashed Potatoes

1. Wash potatoes, peel if desired, chop into 1" chunks, and place in the bottom of a 3 quart pan. Add cold water to cover the potatoes by one inch.

2. Place potatoes over a medium high heat, cover and bring to a boil. Once boiling, reduce heat to medium low and simmer until potatoes are fork tender, about 15 minutes.

3. While the potatoes boil chop the sage, make the garlic paste and brown butter.

1. Finely mince garlic cloves. Sprinkle with 1/2 tsp of salt.

2. Using the flat blade of your knife, mash the salt into the garlic, fold, mince, and mash again, repeating until a paste has formed. Set aside.

1. Place a light colored pan over a medium-low heat and add the butter. Butter will melt and foam up.

2. After the initial foam goes subsides, continue to cook, stirring or swirling the pan every few seconds until the milk solids turn brown with a nutty aroma.

3. Immediately remove the pan from heat and add in the sage and garlic paste. The butter will sizzle and foam up again as the residual heat fries the sage and garlic. Leave the brown butter sage and garlic sauce in the pan to cool.

1. Once potatoes are fork tender use a colander to drain off the liquid - do not rinse. Return the potatoes to the pan* and mash.

2. Add the brown butter, milk, and remaining salt (as needed) to the potatoes, and stir to combine. Serve immediately or cover and keep warm.
