Turkey – boneless, skinless, split turkey breast Dredging Flour – flour – black pepper – kosher salt Egg Wash – egg – milk Hazelnut Crust – roasted, salted hazelnuts – cloves garlic – fresh parsley – fresh sage – panko bread crumbs – orange zest – kosher salt – olive oil

Hazelnut Crusted Thanksgiving Turkey Breast

1 HOUR 10 MINUTES

1 HOUR 35 MINUTES

1. Preheat oven to 325º degrees and prep a roasting pan fitted with a rack. 2. Set up dredging stations with flour, egg wash, and panko herb coating.

Set Up

1. Dredge the turkey in the flour, dip it in the egg wash, then roll it in the hazelnut crust, pressing the mixture to adhere. 2. Place the crusted turkey on your roasting rack and place on the middle rack of the oven.

Prep the Turkey

1. Roast until the internal temperature reaches 150º degrees - about 45 minutes to an hour.  2. Increase the oven temperature to 400º degrees and continue to roast to an internal temperature of 165º degrees - about 7 - 12 minutes.

Roast the Turkey

1. Remove turkey from the oven and allow to rest 7 - 10 minutes before carving.
