– dry spaghetti – avocado oil – dry scallops – butter – fresh sage – kosher salt – fresh ground pepper – grated fresh parmesan cheese – Optional: lemon wedges

Fancy Brown Butter Scallop Pasta

20 MINUTES

1. Cook the pasta following the instructions on the package. Clean scallops, remove side muscle. Heat avocado oil, sear scallops with salt and pepper.

2. With 5 minutes left for pasta, place scallops spaced in a hot pan. Cook undisturbed for 60-90 seconds until a golden crust forms. Flip and cook another 60-90 seconds. Transfer scallops to a bowl, keep warm.

3. Reduce heat to medium, add butter to the skillet. Gently swirl as it melts, sizzles, foams, and browns. Once foaming calms, add sage, let it fry for 30 seconds. Return scallops, spoon browned butter over them, then move back to the plate.

4. Drain pasta. Add pasta and Parmesan to the skillet with browned butter sauce, toss well. Plate the pasta on two dishes, top each with half of the scallops. Garnish with more Parmesan and a squeeze of lemon if you like.
