Custard – white sugar – egg yolks – vanilla extract or vanilla bean paste – heavy whipping cream – whole milk Crème Brûlée Topping – white sugar - divided

Vanilla Creme Brûlée

Heat oven to 300ºF. Boil water for the water bath, preferably in a tea kettle, for easy pouring. Place four 6-oz custard cups or ramekins into a small square pan.

Prep The Water Bath

1. Separate egg yolks, then whisk them together with the white sugar until they lighten in color and take on a thick, creamy texture. Add the vanilla extract or vanilla bean paste and combine.

2. Warm cream and milk on medium heat until bubbles form. Avoid boiling. Temper egg yolks by slowly whisking in 1/4 cup hot milk/cream twice. Repeat, then add the custard mixture into the remaining milk/cream in the saucepan while whisking constantly.whisking constantly to prevent eggs from scrambling.

3. Strain the mixture, preferably into a large measuring cup with a pour spout. Discard any lumps of cooked egg from the strainer. Divide the custard mixture equally between the custard cups.

4. Create the water bath by pouring the boiling water into the pan until it's half way up the side of the custard cups. Careful not to pour water into the custard.

5. Bake in the water bath for 30 - 35 minutes or until centers are set. To test lightly jiggle the pan. The centers should jiggle like jello.

6. Remove custards from the water bath to stop the cooking process. Cool to room temperature, then refrigerate for a minimum of three hours.

Cover each custard with white sugar, then brulee the tops with a kitchen torch until the sugar is caramelized. Serve immediately.
