Creamy Buttery Mashed Potatoes Recipe

1. Scrub and peel potatoes if desired. Cut into 1/2" chunks and place in a saucepan. Cover with water, bring to a boil, then simmer until potatoes are soft (15-20 minutes). Drain without rinsing, and return to the warm pan.

2. Combine cream cheese and butter in a pan, stirring over low heat until melted. Transfer potatoes to a stand mixer bowl, add milk, and use the whisk attachment to mash on low, then whip on medium until smooth.

3. Season with salt and pepper to taste. If the potatoes aren't creamy enough, add milk gradually to achieve desired consistency. Keep warm until ready to serve.
