Creamy beer cheese dip with bacon takes your classic pub-style beer cheese to the next level. With sharp cheddar cheese, crispy bacon, and your choice of beer, this beer cheese is the ultimate party app.


– bacon – bacon fat – all purpose flour – whole milk – beer of choice – Worcestershire sauce – stone ground mustard – garlic powder – ground black pepper – kosher salt – sharp cheddar cheese*

Chop and pan-fry bacon until crispy. Remove bacon and drain on paper towels. Pour hot bacon grease into a ramekin, scraping off excess with a rubber spatula; do not wash the pan.



Measure 2 TBSP of hot bacon grease into the pan; reserve the rest for later or dispose of it when hardened. Adjust flame to medium-low, add flour, and whisk with bacon fat to make a roux. Cook until light golden brown.




Whisk in milk and beer, scraping the pan for bacon bits. As it simmers, it will thicken. Add Worcestershire sauce, mustard, garlic powder, black pepper, and salt. Whisk to combine.


Chop or shred the cheese, stir into the sauce until melted. Chop cooled bacon into smaller chunks; reserve a few tablespoons for garnish and stir the rest into the beer cheese dip.



Serve warm with homemade pretzel knots or your favorite dippers.
