1. Cream softened butter with sugar until light and creamy. Add an egg, mix, then add vanilla.

2. In another bowl, combine sifted flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet in three parts, mixing thoroughly between each addition.

3. Roll 1 tablespoon-sized dough balls. Use your thumb or a 1 teaspoon measuring spoon to make a dip in the center of each. Arrange on a baking sheet and refrigerate.

4. Preheat the oven, then bake cookies. After baking, immediately press down the centers with a 1-teaspoon measuring spoon to fill a space. Allow cookies to cool before filling with caramel sauce.

1.  Combine sugar and water in a heavy-bottom pot. Let it soak, then cook over medium heat without stirring until it turns amber. Remove from heat. Add cream (expect bubbling), then stir in butter. Simmer briefly, remove, add vanilla, and let the caramel cool before using.

2. Fill cookies with homemade caramel, sprinkle with sea salt. Refrigerate extra caramel in an airtight container for up to a month.
