Strawberry Mojito Wine Popsicles
Beat the summer heat with these strawberry mojito wine popsicles. They are loaded with sweet strawberries, a hint of mint and a kick of fruity white wine.

Summer is in full swing and my garden is growing like crazy! What’s a food blogger to do when she finds herself with an abundance of juicy strawberries, tart limes, and mint that just won’t stop growing?? Make strawberry mojito wine popsicles of course!
Strawberry popsicles have long been one of my favorite ways to cool off on a hot summer day. The addition of lime and mint creates a whole new flavor that take these over the top and makes me never want the store bought version again. Add in the wine, and I think I’ll manage okay with these hot days for at least a few weeks more!
Like all of the recipes in this summer’s series on adults only popsicles, this one calls for minimal ingredients, requires very little hands on work, and freezes up in about 8 hours. You must try these popsicles!
The best place to start is with the mint simple syrup. It’s super easy to make, but it does need about an hour to steep (like tea) and cool before you use it. I like to make this stuff in bulk and keep it in the fridge to make homemade mint sodas (thank you Sodastream!), tasty bourbon cocktails, and to sweeten iced tea all summer long. The recipe included makes slightly more than the 1/4 cup that you will use for the popsicles, but it scales up nicely to make more than you will need if you choose to do so.
In a small saucepan combine 1/4 cup of water, 1/4 cup of white granulated sugar, and 1/8th of an ounce of mint leaves. If you don’t have a kitchen scale, it converts to about 2 tablespoons of whole mint leaves. Bring the water to a boil and stir to dissolve the sugar. Remove from the heat and allow to cool in the pan for 1 hour. Strain the mint leaves out and you now have a slightly green, very sweet, mint simple syrup.
Get out your blender or food processor and measure out 3 cups of whole, fresh berries. You could definitely get away with using frozen, but be sure to measure the first and then let them thaw. When frozen berries thaw they lose their shape, meaning you will need a lot more berries to get 3 cups.
Puree the berries until smooth then add in 1/4 cup of simple syrup, 1/4 cup of lime juice, and 1/2 cup of dry white wine. Blend just enough to combine then pour into your popsicle molds. Freeze for a minimum of 8 hours and you have strawberry mojito wine popsicles!

Strawberry Mojito Wine Popsicles
Ingredients
For the Mint Simple Syrup
- 1/4 cup water
- 1/4 cup sugar
- 1/8 ounce mint leaves
For the Popsicles
- 3 cups of fresh whole strawberries (3/4 of a pound)
- 1/2 cup dry white wine (I used Pinot Grigio)
- 1/4 cup lime juice
- 1/4 cup mint simple syrup
Instructions
For the Mint Simple Syrup:
- In a small saucepan combine together the water, sugar, and mint leaves.
- Bring to a boil and stir to dissolve the sugar.
- Allow to cool/steep for one hour, then strain out the mint leaves.
For the Popsicles:
- Place your strawberries in the container of your blender or food processor and puree until smooth.
- Add the white wine, lime juice, and simple syrup and blend just enough to combine.
- Pour into your popsicle molds, put the tops or sticks into place, and freeze for a minimum of 8 hours.
- Enjoy!

It is about 90 degrees here already today and I want one of these popsicles now. Have to figure out how to make them without the popsicle mold. Maybe a cup?
You can absolutely make them with paper or plastic cups, or ice cube trays. The kid sized paper cups are just about right and you can buy classic popsicle sticks. We used to do it that way growing up, but I found that it’s cheaper to buy the mold and reuse it. Enjoy!

These sound amazing, we typically harvest around 70-100kg of strawberries every year and one of our go to things to do with the surplus is turn them into wine and we still have a generous amount of last years strawberry wine left… Gotta give this a go with strawberry wine 😀
