Spiked lemonade popsicles are the second in my summer series on adults only popsicles. These popsicles are light and refreshing with a good balance of sweet and tart, making them a great treat for a hot summer day.

They only have 4 ingredients, including the orange liqueur, and come together in just a few minutes. It took me about 5 minutes which included pulling the lemons from our tree and hand juicing them myself!

Plan ahead to allow at least 8 hours for the popsicles to freeze completely. The recipe makes 2 cups of liquid and can easily be scaled up for as many popsicle molds that you have to fill.

To begin, roll your lemons with the flat of your palm against the countertop to help loosen up the insides and release the juice. Use your fingers or a citrus juicer to squeeze all the juice you can get from the lemons. The amount of juice you will get from each lemon varies by size and freshness, so grab a couple more than you think you will need. I used 3 lemons total, which gave me just over a cup of juice.

Strain the juice through a fine mesh sieve to remove the pulp and seeds, then measure to make sure you have exactly one cup. Any leftover can be used for water, tea, or anything else you may need.

Combine the lemon juice with the sugar, orange liqueur – I prefer Cointreau, and water. Stir until the sugar is dissolved. Sugar doesn’t dissolve well in cold temperatures, so if you opt for the refrigerated lemon juice dissolve the sugar in one of the other liquids at room temperature first.

Divide the liquid evenly among your popsicle molds.  My mold holds about 1/3 of liquid for each popsicle, which will result in 6 popsicles for this recipe. The liquid will expand when it freezes so be sure to leave a gap of about a half of an inch between the filling and the top of the mold.

Place the popsicles in the coldest part of your freezer and freeze for a minimum of 8 hours.

Ingredients

  • 1 cup fresh lemon juice - about 3 lemons
  • 1/2 cup white sugar
  • 1/2 cup plus 2 TBSP water
  • 3 TBSP orange liqueur

Instructions

  • Juice the lemons, then strain the juice through a fine mesh sieve to remove the pulp and seeds.
  • Combine the lemon juice with the sugar, water, and liqueur.
  • Stir until the sugar dissolves.
  • Divide the lemonade evenly among your popsicle molds.
  • Cover with handles or add the popsicle sticks.
  • Freeze a minimum of 8 hours prior to serving.
