25-Minute Bacon-Avocado Ground Beef Burger

Homemade Burger Recipe

Some days you just want a big, juicy beef burger. Not the kind you get from a drive-thru and not a “healthy” alternative made with turkey and wrapped in lettuce. I mean a real burger. The kind that you only have on occasion because it is indulgent, but you don’t care because it’s only on occasion.

This bacon avocado burger, with six layers of yumminess on top of a soft bread roll, is that kind of burger. At 25 minutes of prep time, it’s a great quick dinner idea and it’s also my absolute favorite combination of burger-related flavors.

From top to bottom, it’s got my special honey sriracha mayo, spinach, melty smoked gouda, a flame-grilled all-beef patty, thick-cut butcher’s bacon, and mashed avocado. Serve it up with some crispy sweet potato fritters and a glass of red wine and I am in my own version of foodie heaven.

What You’ll Need

To make this homemade burger recipe even easier to follow, I’ve broken it down into three sections: the homemade burger patties, the sweet & spicy sriracha sauce, and the burger assembly. It will all come together in no time.

For the Burger Patties:

We are starting with the ground beef burger patty and making our own beef burger seasoning blend. Bonus: It tastes great on anything beef.

  • ground beef
  • garlic powder
  • onion powder
  • cumin
  • kosher salt
  • black pepper
  • Worcestershire sauce

Sweet & Spicy Sriracha Sauce

This 3-ingredient sweet and spicy sauce is kind of like a honey sriracha mayo. It’s thick and orange, with the right balance of spicy and sweet.

  • sriracha

Burger Toppings

I like to say that the toppings make the burger and this lineup of toppings is my absolute favorite.

  • King’s Hawaiian burger buns – toast if desired
  • thick cut butcher’s bacon
  • spicy sweet sriracha sauce (see above)
  • avocado
  • baby spinach
  • smoked gouda

How to Make Bacon Avocado Burgers

Like most burgers, the prep work is the most time-consuming part of burger making. The meat has to be seasoned and the toppings have to be prepped, but the actual cook time on these burgers is only 5 minutes.

  • Pull the ground beef from the fridge, and preheat your grill to high.
  • Cook the bacon. I prefer to cook bacon in the oven, using my countertop air fryer oven on the bake setting. You can also do this on the stovetop or in the microwave. Once it reaches the desired degree of doneness, place the bacon on paper towels to drain and cool.
  • Season the ground beef. Combine the beef with the garlic, onion, cumin, salt, pepper, and Worcestershire sauce in a small mixing bowl. Dig in with your clean hands and thoroughly mix together the hamburger and seasonings.
  • Shape your homemade burger patties. Separate the beef into two equal sections, using a scale if desired, and shape it into patties that are roughly one inch thick and the same diameter as your burger buns. Use your thumb to make an indention in the middle of the burger that is about one inch around and 1/4 inch deep. This will keep the burgers from puffing up in the middle as they cook.
  • Prep the remaining toppings. Add the ingredients for the sriracha sauce to a small bowl and stir to combine completely. Wash the spinach and pat it dry. Cut a freshavocado in half and mash using a fork.

When heading out to the grill don’t forget a clean plate for the cooked burgers, a meat thermometer, the cheese, and of course the burger patties.

  • Grill the burger patties over direct, high heat until they reach an internal temperature of 140 degrees for medium, which takes about 2 1/2 minutes per side for 1″ patties. If you prefer your burgers well done, allow extra time for the internal temperature to reach 160. Place the cheese on top of the burgers for about a minute before you pull them off the grill.
  • Let the burger patties rest. I know you are hungry, they smell amazing, and you just want to eat, but letting the patties rest for 5 minutes will give you juicier burgers and less soggy buns.
  • While the patties are resting, assemble the bacon avocado burgers. On the bottom burger bun, add a layer of mashed avocado and two strips of bacon. On the top bun, apply a layer of sriracha sauce and top that with the spinach. Add the burger patty with melted cheese in the middle and you have yourself the 6-layer masterpiece that is Renee Nicole’s bacon avocado burger.

The Best Ground Beef for Burger Patties

When shopping for ground beef there are more options than ever these days. At my grocery store, I can find a variety of grass-fed, organic, wagyu, Angus, prime rib, conventional, and even plant-based ground beef. While I personally do spring for the grass-fed option, the most important factor in picking a great ground beef for patties is to look at the fat content.

The fat content is often presented as a fraction like 96/4 or 80/20, but it can also be written as 93% lean 7% fat, or 73% lean 27% fat. For the juiciest, richest, most indulgent homemade burger you’ve got to go for the 80/20 blend. If you must go with a lower-fat option, look for 85/15.

My personal opinion: a delicious burger is a rare indulgence that is good for your soul. If it’s made with anything less than 90/10 ground beef, it isn’t usually worth the calories.

Serving Suggestions

This burger is a lot and doesn’t usually need a bunch of sides to make it a meal. Some of my favorite pairings are grilled corn on the cob, sweet potato fritters dipped in the extra spicy sweet sriracha sauce, or grilled asparagus spears.

How to Store and Reheat

Once assembled, burgers don’t keep well as leftovers. However, leftover patties can be refrigerated and reheated in the oven or on the grill. If you are planning for leftovers, don’t add the cheese to the burger until you reheat it.

The raw burger patties can be seasoned and shaped a day or two in advance and kept refrigerated in an airtight container until ready to grill.

Ingredients

For the Burger Patties:

  • 10 ounces 80/20 ground beef
  • 1/16 teaspoon garlic powder
  • 1/16 teaspoon onion powder
  • 1/16 teaspoon cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon worcestershire sauce

Spicy Sweet Sriracha Sauce

  • 2 tablespoon sriracha
  • 2 tablespoon honey
  • 1/3 cup plus 1 TBSP of mayo

Burger Toppings

  • 2 buns Kings Hawaiian burger buns
  • 2 slices thick cut butcher's bacon
  • 2 tablespoons spicy sweet sriracha sauce (see above)
  • 1/2 avocado
  • 10 – 12 leaves of baby spinach
  • 2 slices smoked gouda

Instructions

Preparing the Patties and Toppings:

  • Pull ground beef from the fridge and allow to rest at room temperature for 10 minutes.
  • Preheat your grill on high.
  • Cook the bacon using your preferred method. I like to use my countertop air fryer oven on the bake setting. You can also do this on the stovetop or in the microwave. Once it reaches the desired degree of doneness, place the bacon on paper towels to drain and cool.
  • Place the ground beef in a medium mixing bowl. Add the garlic, onion, cumin, salt, pepper, and worcestershire sauce.
  • Thoroughly mix the hamburger with spices. Separate into two equal sections and shape into patties that are roughly the same diameter as your burger buns and about 1" thick.
  • Using your thumb, make an indention in the middle of the burger that is about one inch around and 1/4 inch deep to keep the burgers from puffing up in the middle as they cook.
  • Make the spicy sweet sriracha sauce by combining the sriracha, mayo, and honey in a small mixing bowl.
  • Cut an avocado in half and mash using a fork.
  • Wash the spinach and pat it dry.
  • Take the raw burger patties, a clean plate for the cooked burgers, a meat thermometer, and the gouda to the grill.
  • The burgers are cooked to medium over direct high heat until they reach an internal temperature of 140 degrees, which should take about 5 – 6 minutes total. If you prefer your burgers well done, allow extra time for the internal temperature to reach 155.
  • Add the cheese on top the last minute they are on the grill.
  • Place the cooked burgers on a clean plate and allow to rest 5 -for 10 minutes.

Assemble the Burgers:

  • Starting with the bottom bun, add a layer of mashed avocado. Place the two strips of bacon on next, followed by the burger patty with melted cheese.
  • Moving to the top bun, apply a layer of sriracha sauce and top that with a bit of spinach.
  • Place the top bun on the bottom layers, and you have yourself the 6-layer masterpiece that is the Bacon Avocado Burger.

Notes

Note: If you like to serve your burgers cut in half, slice perpendicular to the bacon. It makes it much less messy to eat.
There will be extra sauce as the recipe makes about 5 ounces. It tastes great on sandwiches, salads, tacos, or even french fries (especially sweet potato fries!). If you have leftover sauce, it can be stored in an airtight container in the fridge.
