Raspberry Mojito Cocktail

Made for hot afternoons and warm nights, this light and refreshing raspberry mojito cocktail is the perfect drink for summer sipping. It’s made from six simple ingredients, and like most muddled cocktails, it’s served over ice. As the days get longer and the nights get warmer, it’s time to dust off my list of refreshing summer cocktails and share them with you. My requirements: they should be a little sweet and a little fruity. Shaken or stirred, they must be served over ice.

With raspberry, mint, and lime, this raspberry mojito definitely fits the bill! It’s a six-ingredient muddled cocktail that puts a raspberry spin on the classic mojito.

Adapted from the trusted Mr. Boston Official Bartender’s Guide, this raspberry mojito is one of my favorite summer drinks. Make them one at a time, whip up a whole pitcher, or make a family-friendly raspberry mojito mocktail. The choice is up to you!

Oregon Raspberries

You guys know by now that I’m partial to blackberries grown in Oregon, but did you know that our local Oregon family farms grow pretty awesome raspberries too? The same ideal growing environment that promotes sweet, juicy, blackberries has the same effect on other cane berries and that includes raspberries!

Oregon grown raspberries are juicy, plump, and available in grocery store freezers across the nation. While this raspberry mojito tastes great with both fresh and frozen raspberries, I often opt for the frozen ones for this cocktail. Yes, even in the summertime, when fresh raspberries are everywhere.

Not only are the frozen ones picked at the peak of ripeness, locking in the perfect flavor, they tend to fall apart more easily when muddled. Also, you can swap out some of the ice for frozen berries for an extra cold berry punch.

Raspberry Mojito Ingredients

A classic mojito has five ingredients: lime, mint, sugar, rum, and soda water. To make it a raspberry mojito, we simply add raspberries to the mix. Yep, it’s just that simple. Want more raspberry flavor? Add more raspberries! The best part of making cocktails at home is that you can tweak them to be perfect for your pallet.

Fresh or Frozen Raspberries

Both fresh and frozen raspberries work great in this recipe, but as I mentioned above, I’m partial to frozen raspberries. Mainly it’s because freezing breaks down the structure of the berry, making them mushy once they thaw.

When using a muddler to breakdown the berries for this cocktail, frozen berries simply take less work. Since we are using Oregon berries that were picked at their peak and flash frozen, the flavor is the same. If you want to garnish with extra raspberries, go for fresh, as they make less mess.

Sugar or Simple Syrup

Both sugar and simple syrup are here to add sweetness to our mojito, but when it comes to muddled cocktails I prefer using sugar. The sugar granules dissolve quickly and easily in the lime juice, especially if your limes are already at room temperature. Basically, it saves you an unnecessary step.

If you really want to use simple syrup, I highly recommend you use a mint simple syrup instead of a basic simple syrup, which I cover in my Mint Julep Bar post.

Raspberry Mojito Mocktail

A good raspberry mojito mocktail should still have a great balance of mint, lime, and raspberry, without tasting like it’s missing something. Swapping your mojito from a cocktail to a mocktail is super simple and it’s what I’ll be doing all summer long.

Simply put, swap the rum for a little more soda water, or just omit the rum. This raspberry mojito is so packed with flavor that you won’t be missing anything by taking out the rum, except the extra calories.

How to make a Raspberry Mojito Pitcher Cocktail

If you are serving a crowd, want to take it along on a picnic, or just want enough for the whole table, try making your mojito as a pitcher cocktail. These instructions can be adapted to however many you need to make, but my recommendation for a 32 ounce (1 quart) pitcher is to multiply the ingredients by five.

  • In your cocktail shaker muddle the lime juice, sugar, and mint leaves, then add to the pitcher.
  • In the now empty cocktail shaker, muddle your raspberries to break them up, then add to the pitcher. If using frozen berries, allow them to thaw first.
  • Use the rum to rinse the cocktail shaker and add it to the pitcher.
  • Add the club soda and ice cubes to the pitcher, then stir to combine completely.
  • Fill each glass with a few extra ice cubes, then top off with raspberry mojito mixture.
  • If desired, serve with extra fresh berries, lime rounds, or mint sprigs for garnish. I like to add extra sliced lime rounds into the pitcher because I think it looks pretty.

Ingredients

  • 2 – 3 teaspoons granulated sugar
  • 4 – 6 mint leaves
  • 1/2 lime
  • 1/4 cup frozen raspberries (about 8 – 10)
  • 2 ounces white rum
  • 1 cup ice cubes
  • 4 – 6 ounces soda water

Instructions

  • In a cocktail shaker add sugar, torn mint leaves, juice from half a lime, and frozen berries. Muddle together to dissolve the sugar and break up the berries.
  • Add rum and ice cubes. Cover and shake to combine.
  • Pour into a tall glass and top with club soda. Serve immediately.

Notes

Make a party pitcher: use a 2 quart pitcher and multiply the ingredients by five.
To make a mocktail, replace the rum with extra soda water.
