This one pan garlic pepper pork dinner definitely fits the bill. It features Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin with a built in side dish of baked apples and sweet potatoes.

Preparing your Garlic Pepper Pork Dinner

Like most quick and easy 30 minute meals, make sure you start this one by preheating your oven. We roast the whole dish at 400 degrees. If you don’t let the oven get started first you’ll be ready for it before it is ready for you.

Chop your onion, sweet potato, and apple so that they are about 1/2″ in size. The apples will cook the quickest and while mushy apples remind me of applesauce in this dish, if you chop them smaller than 1/2″ they are more likely to stick and burn.

The sweet potatoes on the other hand will still be crunchy if you chop them much larger than 1/2″. If you want your sweet potatoes to be softened through, cut the sweet potato in quarters long ways, then slicing the quarters into 1/8″ or 1/4″ slices, which will help them cook faster.

Choosing the right pan for a One Pan Dinner

To make this a true one pan meal I recommend using a large 13″ – 14″ oven safe skillet. The one in the photos is a 13.25″ cast iron skillet that I’ve linked to just above the recipe.

An oven safe skillet will allow you to sear on the stovetop and roast in the oven, without switching pans. Bonus: it can go straight to the table, which means no extra dishes to wash.

If you don’t have a skillet large enough to hold everything you can make this using two pans. (I won’t tell anyone!) Cut the tenderloin in half so that you have two smaller tenderloins. Use a standard skillet to sear the pork, then place it onto a sheet pan. Add the veggies and cook as instructed in the recipe below.

No Boring Leftovers Here!

If like me you end up with leftover pork, there are many delicious ways to repurpose it. Try chopping it up for morning omelets with cheddar cheese. Toss some into a salad for an easy lunch, or make pork tacos with homemade slaw.

My favorite way to repurpose this one pan dinner is to make cheesy pork melts with apple sweet potato soup. Thinly slice the leftover pork, layer it with cheese (I like gruyere) on your favorite bread, then grill it like a grilled cheese. Blend the sweet potatoes, onions, and apples together, then heat with a bit of stock to make a quick soup. It’s a quick and easy meal that doesn’t taste at all like eating leftovers!

Ingredients

For the Veggies:

  • 1 granny smith apple (2 cups chopped)
  • 1 medium sweet potato (2 cups chopped)
  • 1/2 sweet onion (1 1/2 cups chopped)
  • 2 tsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/8 tsp pepper

For the Pork:

  • 1 – 2 TBSP olive oil
  • 1.5 lb Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin

Instructions

  • Preheat the oven to 400 degrees.
  • Chop the onion, sweet potato, and apple, then toss with the olive oil, dried thyme, salt & pepper.
  • Preheat a large, 13″ – 14″, oven safe skillet over medium high heat, then add in just enough oil to coat the bottom of the pan.
  • Seared the pork tenderloin on all 4 sides, about 1 – 2 minutes per side.
  • Add the seasoned veggies on either side of the pork and place it all in the oven.
  • Roast for 15 – 20 minutes or until the veggies have softened and the internal temperature of the pork reaches 140 degrees. Allow it to rest 5 minutes and come up to 145 degrees prior to serving.

  1. Made this tonight and followed the recipe exactly. Took the pork loin out to sit as directed but left the veggies on the skillet in the pan for the additional five minutes. Hubby and I were both impressed by the flavors. Although there are only 2 of us there was not much left over! Thanks for the recipe.
