Garam Masala Brussels Sprouts

When it comes to weeknight dinners, nothing beats having a simple to make side dish with uncommonly good flavors. These garam masala brussels sprouts taste sweet and tangy, with a hint of spice, but no heat in sight. They are deliciously seasoned and oven roasted to perfection, making a fantastic addition to your family table.

Ah, the Brussels sprout. Most of us seem to have a love/hate relationship with these tiny, green cabbages. Up until a few years ago, I was solidly on team hate, but learning to cook made me change my mind.

I discovered that everything I hate about Brussels sprouts – the texture, flavor, and smell – are the things that change based on how you cook them. After trying a few different cooking methods, I learned that for brussels sprouts oven roasting is by far my favorite.

When it comes to the flavor, these brussels sprouts have it all. With a bit of sweetness, a little acid, and a little spice, these garam masala brussels sprouts will be a staple in my kitchen all season long.

Making Garam Masala Brussels Sprouts

The recipe was inspired by my Garam Masala Salmon. When first introduced to a new spice or spice blend, I have a tendency to try it with everything. With brussels sprouts being in season, they were one the first veggie to be tested. The results were so good that I made them three more times that week.

Besides having great flavor, these Brussels sprout are super easy to make. Essentially, we make a homemade garam masala vinaigrette, toss it with the halved Brussels sprouts, and then bake. It takes less than 5 minutes of prep time and fifteen to eighteen minutes in the oven for tendercrisp sprouts. Check out the video to see just how easy they are to make.

What is garam masala?

For those of you that are unfamiliar with garam masala, it’s an Indian spice blend. You can find it in the spice aisle of most American grocery stores.

Typically it contains a combination of coriander, cinnamon, cumin, cardamon, black and white pepper, clove, and various other spices depending on the region. Each blend will be slightly different, but I haven’t yet found one that I truly dislike.

Oven Roasted Brussels Sprouts

To make great roasted Brussels sprouts start with a hot oven, but not so hot that the sauce burns. For this recipe I’ve found that 400º degrees works best. If needed, adjust that slightly based on your own oven.

The directions in this recipe are for tender crisp brussels sprouts. Where they are beginning to soften, but not soft all the way through. If you prefer your brussels sprouts cooked until soft, I drop the oven temperature to 375º and extending the cook time to 25 minutes. This will keep the sauce from burning, while giving your sprouts a little more to cook through. It also helps to flip your brussels sprouts half way through cooking.

Tips and Tricks for Garam Masala Brussels Sprouts

  • For a bigger flavor punch, prep the brussels sprouts early on in your cooking process. This gives them extra time to marinate in the sauce, increasing the flavor.
  • To make clean up easier, cook them on a foil lined baking sheet.
  • For sprouts with crispier edges, skip the foil and cook them directly on the pan.
  • For the most even cooking, place the brussels sprouts on the pan cut side down in a single layer.
  • If your sprouts start to burn on the top before they are cooked through, loosely cover them with a sheet of aluminum foil.

Garam Masala Brussels Sprouts

Deliciously seasoned and roasted to perfection these garam masala Brussels sprouts are a fantastic addition to your family table.

Ingredients

  • 3/4 lb fresh (Brussels Sprouts (about 16 small – medium sprouts))
  • 2 TBSP olive oil
  • 2 TBSP balsamic vinegar
  • 1 TBSP brown sugar
  • 1/2 tsp garam masala
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Heat your oven to 425 degrees.
  • Line a half sheet baking pan with aluminum foil and set aside.
  • Wash the Brussels sprouts, removing any limp or dried leaves. Trim the ends as necessary, and cut each Brussels sprout in half lengthwise.
  • In a mixing bowl large enough to toss your Brussels sprouts, whisk together the olive oil, balsamic vinegar, brown sugar, garam masala, salt, and pepper.
  • Once combined, add the Brussels sprouts and toss to combine.*
  • Lay the garam masala Brussels sprouts out in a single layer on your half sheet pan, with the cut side down. The pan should be crowded, but not overlapping.
  • Cook for 15 – 18 minutes for tendercrisp Brussels sprouts.**

Notes

*For more intense flavor, these Brussels sprouts can be marinated for 10 – 15 minutes prior to cooking.
**If you prefer yours to be closer to raw, cook for 10 minutes. If you like them well done, allow for about 25 minutes, but be sure to flip them over after 18 minutes to prevent burning.
