How to Make a Cucumber Avocado Smoothie
Homemade smoothies are one of the easiest things to master in the home kitchen. Generally, you gather your ingredients, throw them in a blender, puree until smooth, and enjoy. Alternatively, you can toss the ingredients in a jar and puree with an immersion blender.
What makes this cucumber avocado smoothie unique is the combination of ingredients going into it and the ingredients we leave out. The biggest thing that makes this smoothie different is that, unlike my berry avocado smoothie, this version is not at all sweet.
Unlike my kiwi smoothie, this savory green smoothie doesn’t taste like spinach or kale because it doesn’t have any. What it does contain: cucumber, avocado, cilantro, lime, water, and a dash of pink Himalayan sea salt. It’s different and definitely worth trying for yourself.

- A kitchen scale will allow you to measure ingredients by weight, or you can use measuring cups and spoons to measure by volume.
- A reusable straw makes it a little easier to drink your smoothie.

As with all homemade smoothies, the ingredients can be customized based on your taste buds. Don’t like cilantro? Swap it for basil. Don’t have lime on hand? Try lemon or even orange. No pink salt? Skip it or swap it for the salt of your choice.

This cucumber avocado smoothie is a refreshingly delicious, savory take on the green smoothie. With buttery avocado, crisp cucumber, cilantro and lime, it’s creamy, crisp, and refreshing all in one.
As with most smoothies, it’s going to taste best when enjoyed right away. While this smoothie doesn’t rely on ice or frozen ingredients to maintain its texture, it does contain avocado, which can oxidize and turn brown when left exposed to the air.
If you really want to keep it for later, I’d pour it into ice cube trays and freeze it. Then when you are ready to enjoy it, pop the ice cubes back in the blender and blend until smooth.

Ingredients
- 1 avocado (1 cup or 5 ounces chunks, fresh or frozen)
- 1/2 cucumber (1 1/2 cups sliced or 5 ounces)
- 1/2 cup cilantro (8 grams)
- 1/2 cup water (4 ounces)
- juice of 1 lime (about 1 tablespoon)
- pinch of pink himalayan salt
Instructions
- Place avocado flesh, cucumber, cilantro, water, lime juice, and salt into the blender.
- Puree until smooth and creamy.

I made this exactly as described but I did not like it at all. I think it needed a little sweetness to play against all the rest. Maybe pineapple? I didn’t have any on hand, but I think that would help. Sorry.
No apologies necessary! This smoothie isn’t meant to be sweet and it’s okay not to like it, that’s the beauty of making things for yourself! Pineapple, orange juice, or even a bit of honey would sweeten it up and make it more to your liking.
Why do you remove the skin and seeds from the cucumber? They’re nutritious!
You are absolutely right! They are nutritious. I’m going to guess it’s because the blender I was using at the time would not process them enough to make them smooth. If I were making this smoothie today with my Vitamix, I’d leave in both the seeds and skins in and get a perfectly smooth smoothie.
Hi, I love cucumber in an all veggie smoothie; however I wanted to get a more simple recipe and yours is it! I am not a fan of cilantro so I am wondering if anyone has tried parsley in place of it? Any other suggestion for a replacement? I bet this would be great as a savory popsicle too!
Hi Kandy! I often use basil and cilantro a substitutes for each other, and know that for this smoothie basil works really well. I haven’t yet tried it with parsley, but I think it would add a great flavor as well. Please let me know if you try it with parsley!
How many ounces are the 14 servings?

Can I substitute lemon instead lime? Margaret
Margaret, you can absolutely substitute lemon for the lime. I like the flavor better with lime, but with a lemon tree growing in my backyard it’s easier to make a substitution than take a trip to the store. Try it both ways and see which one you like best!
Ingredients look delicious but tried this recipe and its a bit to be desired. Could really use some acidity to balance it out. Not a fan but those are just mine and my wife’s tastes.

Sometime half of a lime does it and, like I mentioned in the post, other times it needs a bit more. To satisfy your tastes, try upping the lime and maybe the salt too. Cheers!

Cucumber in a smoothie is so refreshing! Think cucumber water in a concentrated form. Mine had little pulpy bits of cucumber, but if you have a high end blender I’m sure they would be obliterated.
